Rustic Oven-Baked Potato Wedges

Simple, savory, and made for sharing. Serves 4-6


These rustic potato wedges are an easy side for family dinners, burgers, grilled meats, or a casual gathering at home. Crisp around the edges, tender in the center, and seasoned with herbs and pantry staples.

Ingredients

  • 6–7 large russet potatoes

  • Olive oil, enough to coat

  • Sea salt, to taste

  • Black pepper, to taste

  • Fresh thyme

  • Paprika

  • Italian seasoning, optional

  • Fresh rosemary, chopped

  • Sour cream, for serving

Directions

1. Prepare the potatoes
Preheat oven to 425°F. Wash the russet potatoes well and dry thoroughly. Slice lengthwise into thick wedges or julienne-style pieces.

2. Season
Place the potatoes in a large mixing bowl. Drizzle generously with olive oil and toss until evenly coated.

Sprinkle with sea salt, black pepper, fresh thyme, paprika, and Italian seasoning if desired. Add freshly chopped rosemary and toss again until the potatoes are well coated.

3. Arrange
Spread the potatoes onto a baking sheet in a single layer, leaving a little space between the pieces so they roast evenly.

4. Bake
Bake at 425°F for approximately 40 minutes, or until the potatoes are golden and tender when pierced with a fork.

For more even browning, turn the wedges about halfway through baking.

5. Serve
Serve hot with sour cream on the side.
